Caribbean Appetizers: Geera chicken
Geera chicken is a tasty Trini poultry dish consisting of chicken parts such as back, neck, and gizzard, along with garlic, onions, hot peppers, thyme, curry powder, and the key ingredient used in the dish – geera, or cumin.

The dish is extremely easy to make – marinated chicken pieces are simply cooked in the combination of all other ingredients and oil. Geera chicken is typically served as an appetizer at parties, and it is common in numerous bars and rum-shops on the island as an accompaniment to alcoholic beverages.

1. Wash and season the meat with the salt thyme, chadon beni, onion, pimento, chive and 2 of the garlic cloves (chopped).
2. Add the curry. Mix thoroughly and leave to marinate for about an hour.
3. Saute the other two cloves of garlic in some oil and add the meat. Add the pepper. Add water and allow meat to cook. When almost done, add the geera and mix well.
