Iranian Appetizers: Ashe Hububat (Ash of Grains)
Ash a special icon of Iranian cuisine represents of the richest food in the world. It is truly amazing to have a close touch of the Ash culture in Iran. Anyone who has knowledge of Iranians s/he would acknowledge the latter so fast, because Ash is more than a food. However, as an appetizer it catches the eyes of all vegans worldwide.

Almost every health expert endorses the fact that grains are of vital significance for human body's health and in all cuisines worldwide you can find various types of grains. In Persian cuisine, grains play a very significant role and you cannot neglect them. Grains are essential part of many types of Ash, Khoresht and stews. Ashe Hububat is made by different types of grains and presents an interesting meal for the people who suffer the shortage of vitamines.

# Saute small diced onion and minced garlic in some oil until just past translucent. Add turmeric and mix well. Add beans and 10 cups of water. Bring to a boil and cook covered for 1 1/2 hours.

# In the mean time clean and rough chop herbs and spinach.

# Add herbs and spinach to the beans. Season with salt and pepper. Cook covered on medium for another 1 1/2 to 2 hours until beans are cooked all the way through.

# Slice the red onion in thin half moons and sauté in oil until golden.

# Add dried mint and continue to fry on low heat until onion becomes crispy. Once the soup is ready ladle in soup bowls and place fried onion garnish on top.
