Kookoo sabzi is an aromatic omelette that is served on the first day of spring and Persian new year. It is the most popular Kookoo in Iran, a vegetarian dish filled with variety of herbs and greens. This vegetable based dish can be made in many ways and every Iranian woman would use her own technique by mixing various types of fresh delicious veggies or using different spices and eggs.
# In a large bowl mix the chopped herbs (parsley, dill, scallion, cilantro).
# Then add the eggs, turmeric, salt, pepper and flour to the bowl and beat until smooth.
# Heat vegetable oil in a non-stick pan over medium heat. When oil is hot with a spoon pour in the mixture and with the back of spoon shape them to circles.
# Once you see that the bottom has turned a deep green where the edges are crispy, flip them over. Add more oil if necessary.
# Place a dish with a paper towel in it next to your work station. When removing the patties from the pan, try to drain as much of the oil as possible, then place onto the plate and serve. You can serve it warm or cold.
