Iranian Salads: Cucumber and Pomegranate Salad
Shahreza, Tarum and Saveh are three cities in Iran that are known as the paradise of pomegranate. There are dishes like "Fesenjoon" in Persian Cuisine cooked specially with pomegranate. Now think of a salad in which pomegranate is combined with cucumber the most popular ingredient used in most Iranian salads.

Have you ever had cucumbers with just some lime juice on top? You don’t know what you’re missing out on if you haven’t tried it yet. SO GOOD. And pomegranates go amazingly well with the cucumber and lime! We’re currently trying to move towards a more whole foods approach to eating – so no refined sugar, processed food or dairy. Pure. Healthy. Delicious. Food. It’s not easy, and we have our cheat days, but we’re getting there.

# Chop the cucumbers into quarter sized pieces. Finely chop the green onions.

# Deseed one pomegranate and set aside.

# Cut the feta cheese into small dices.

# Combine the lime juice, olive oil and black pepper. Give it a slight whisk to create a vinaigrette.

# Toss together the chopped cucumber, green onion, pomegranate seeds and vinaigrette. Garnish with feta cheese. Serve slightly cold.
