This healthy tomato salad is really one of the most simple sides. In this easy salad recipe, we simply combine garden fresh tomatoes, onions and a sprinkle herbs. You can cut your tomatoes in half if they’re cherry tomatoes but if you have other garden tomatoes, just bite sized chunks is great. You don’t need to drain them or remove the seeds. Many often make tomato salad with feta or bocconcini (fresh mozzarella) if they have it on hand.
# Place tomatoes, red onion and bocconcini (if using) in shallow bowl.
# Drizzle with olive oil and red wine vinegar. Toss to combine.
# Season with salt, pepper and fresh herbs to taste.
